Dolcetto d'Alba

Production area: the whole territories in the municipal districts of Barolo and Novello.
Grape variety: Dolcetto
Age of vines: 40 years.
Harvest time: mid-September.
Vinification: traditional method. The must is in contact with the skins for 5 – 6 days; when the fermentation is over the wine is racked off.
Maturation in cellar: the new wine is kept for about eight months in stainless steel tanks and undergoes some racking before being bottled.

Minimum total alcohol content by volume: 12-13%
Minimum total acidity: 5.5-6.5 ‰, pH 3.25-3.50
Sensory analysis
Colour: ruby red with intense purple hues.
Bouquet: fresh, vinous, with pleasant scents of fruit.
Flavour: full bodied, dry, pleasantly bitterish.
